It’s ulu (breadfruit) season again here in Hawaii. We have been getting requests for ulu chips all year and the time is almost here. We will be making our first batch of ulu chips this week and will be posting to our Facebook Page as soon as the chips are ready and in our gift shop. Please join and like our Facebook page to make sure you get the update.
Breadfruit makes great chips that have a very distinct taste. They are similar to a potato chip, but also have a bread-like aroma and taste.
Called “ulu” here in Hawaii, it is a starch based fruit that is part of the Fig family. Breadfruit grows on trees which can reach 40-60 feet tall and a similar width. The fruit of the tree is usually round, oval or oblong and can weigh over 10 pounds each.
One of the most impressive things about ulu trees is that each tree can produce a large amount of fruit. A single tree can produce 200 or more grapefruit sized fruits per season. While not all trees will produce this much, and not all fruit will grow to full size, this give a potential output of over 2000 pounds of fruit per tree. It’s one of the reasons that breadfruit is being cultivated around the world to help end hunger.

Hawaii Island Gourmet and Atebara Chips has been making chips locally here in Hawaii since 1936. We are Hawaii’s first chip company and are also responsible for producing the first Taro Chip (a smart business decision by the the company founder, Mr. Atebara, when all of the potatoes disappeared due to WWII). We began making sweet potato chips soon after.
Over the years we have always focused on being local and sustainable. Our methods in dealing local help support our community and farmers, and are also responsible for the freshness and delicious quality of our chips. Today, I would like to explain this process by introducing you to one of our sweet potato farmers, Tom.
Tom (in the picture above with Hawaii Island Gourmet Manager, Avis) and his family have been farming here on the Big Island for over 6 years. His company, Big Island Ag Products LLC primarily grows sweet potatoes and ginger. When I ask him what he likes about farming he states, “Our family loves farming. The thought of growing something that people like is just fantastic.”
Tom’s love of farming produces great sweet potatoes. The first important step in delicious sweet potato chips.
The second step is to make sure that the sweet potatoes are as fresh as possible. We work with Tom on a weekly basis so that his delicious sweet potatoes are brought to our shop as soon as they are pulled from the ground.
Once they are pulled, they also have a very short trip. Tom’s farm is located just 20 minutes from our factory.
Our sweet potato “cookings” are scheduled with Tom’s deliveries to create the freshest sweet potato chips. We begin turning sweet potatoes into sweet potato chips when the sweet potatoes are the freshest. The final step.
The ability to go from farm to factory in the same day has two great outcomes.
- The freshest sweet potatoes make the best tasting chips.
- Our chips don’t require any additives or preservatives, making them a healthier choice.
Our relationship with Tom and our “Farm to Factory” process allows our chips to be fresher, better tasting and more healthy.

Whether it is baked potatoes, mashed potatoes or sweet potato chips, you should probably be eating more purple sweet potatoes. Listed #1 on Dr. Oz’s “5 Superfoods To Eat Now” in 2010, the purple sweet potato has health benefits that you just can’t get from other types of potatoes.
To start with, the purple sweet potato gets its vibrant color from the high level of naturally occurring antioxidants. Blueberries are known for their high level of antioxidants and purple sweet potatoes contain over 150% more of them than blueberries do. Antioxidants are known to help prevent cancer.
They are high in vitamin A, vitamin C, manganese and fiber, as well as vitamin b6, potassium and iron. As mentioned in the Dr. Oz article, they are also rich in beta-carotine. Originally native to the Americas, the Purple Sweet Potato found it’s way to Japan where it is used in everything from main dishes to sweets to ice cream. Also called the Okinawan Sweet Potato, it eventually made its way to Hawaii where it thrives in the volcanic soil.

There are a lot of chips available these days. As we are all considering healthy options, there has been an increase in healthy chips made from vegetables and sweet potatoes. What are healthy chips? There are a lot of diets out there that limit what you can and can’t eat. They all vary on what is okay, but what they do mostly agree on is that fewer ingredients is better. You also want to try and keep those ingredients as basic as possible. If there is something on the label that you can’t pronounce, it probably isn’t going to fall into the health category. Keeping ingredients in there most basic forms is better for your body. So let’s start with the ingredients that make Hawaii Island Gourmets chips healthy. Three. All of our salted chips contain only three ingredients as listed below.
- Taro Chips: Premium Hawaii Island grown taro, canola oil, salt
- Sweet Potato Chips: Premium Hawaii Island grown sweet potatoes, canola oil, salt
- Original Atebara’s Potato Chips: Premium russet potatoes, canola oil, salt
In addition to keeping our chips to only three ingredients, we only use premium, freshly grown produce. Who would have thought to make taro chips when everyone else was already making potato chips? While it is becoming more common today, using taro or sweet potatoes to make chips required a bit of ingenuity and some special circumstances. It’s actually quite an interesting story about a new company going through hardships and finding a way to thrive.
In 1936, Hawaii Island Gourmet, or Atebara’s as we were called at the time, became the first chip company in Hawaii. Mr. Atebara was looking through a magazine and came across a chip making machine. Having never even eaten a potato chip, but being the entrepreneur that he was, he purchased the machine and Atebara’s Chip company was started.
The company did well in the early years. Atebara’s kitchen cooked chips grew in popularity, but something was about to happen that would change Atebara’s and the world forever. In 1941, World War II started. As a result, all of the potatoes went toward the war effort and Atebara’s was in danger of having to close it’s doors.
Instead of giving up and shutting down, Mr. Atebara looked for another option for his chips. While potatoes don’t grow in Hawaii, there was an abundance of Taro. Taro thrives in the warmer, wetter climate in Hawaii, and was in much lower demand at the time. In 1941, we became the first chip company to produce taro chips.
Having found taro chips, creating a sweet potato chip, another abundant crop in Hawaii, was just the next logical step.
Hawaii Island Gourmet still makes our chips the same way we have since 1936. Instead of adding lots of additives and preservatives, we rely on quality taro and sweet potatoes grown locally here on the Big Island of Hawaii. Even today, our taro chips (as well as our other chips) contain only three ingredients: premium Hawaii grown taro, canola oil, and salt).
The introduction of the taro chip literally saved the company. It’s for that reason that we use an image of the three taro leaves as our the logo for Hawaii Island Gourmet.

It all starts with three bags of our famous chips (sweet potato chips, taro chips, and the original Atebara’s potato chip). Kettle cooked the same way since we started making them in 1936. Each chip has it’s own unique texture and flavor.
In addition, all of our handmade chips are made right here in Hawaii and the taro and sweet potatos are grown by local farmers.
Next, are three tropical flavors (passion fruit, coconut, and Kona coffee) of our handmade chocolate barks. Gourmet dark chocolate sandwiched together with flavored white chocolate, with a little bit of crunchiness thanks to small pieces of our chips.
Last, are 3 boxes (ginger, coconut, and dark chocolate) of our handmade taro cookies. The taro gives these cookies a uniquely Hawaiian taste and a great crunch. They go perfectly with tea and coffee.

Ironically, it was actually because of bad events rather than good ones that started the company’s expansion into taro and sweet potato chips. While everyone was preparing for this last weekend, Hawaiian Island Gourmet and Atebara Chips was busy making a new batch of sweet potato chips. To make sure that the chips are as fresh as possible, they are sliced, cooked, and bagged all on the same day.
The chips in the picture above have just been cooked and will next go into the spinner. A device that is used to remove any excess oil. Our sweet potato chips are made from sweet potatoes grown by local farmers right here on the Big Island. This ensure that we use the best, most sustainable products and that you get the freshest chips.

These ginger taro cookies are made using locally grown ingredients (taro and ginger) and are of course made at our kitchen here in Hilo, Hawaii.
There are a lot of cookies around, but taro cookies are something that are a little more rare. Because of the taro in the cookie, you get a much different texture than you do from a traditional cookie. The taro makes the cookie much more crunchy, which in turn, makes it perfect for tea or coffee.

When we say “handmade gourmet cookies”, we really mean handmade. Here is Andrew whipping up a batch of our delicious Ultimate Chocolate Cookies for First Light Bookstore at the Mauna Kea Visitor Information Station.
Our Ultimate Chocolate Cookies are a chocolate cookie with chocolate chips, that are then dipped in different flavors of chocolate. We offer them in dark chocolate, mint chocolate, raspberry and lilikoi (passion fruit).

Fresh and hot out of the oven, Hawaiian Island Gourmet cookies are more than just cookies. To give them that something extra, we take our hand-made shortbread cookie batter, and add pieces of our potato chips (above) and our taro chips (below). This gives the cookie a sweet soft side with small bits of salty crunchiness. We also have cookies that contain our sweet potato chips.

Hawaii Island Gourmet and Atebara is known for its potato chips, taro chips and sweet potato chips. We have been making healthy chips (using only three ingredients: potatoes or taro, salt and canola oil) since 1936. Our chips are kitchen cooked and handmade. To keep them as healthy as possible, we use a special spinning process to remove any extra oil.
This weekend, however, we were at the grand opening of the Hilo Trading Company sampling our hand-made, Hawaii Island Gourmet chocolates. The event was a success with local companies coming from all over the greater Hilo area to promote their products. Whether it be chocolates, chips, macadamia nuts, or coffee; The Hilo Trading Company is a one stop shop for products made in Hilo, Hawaii.
To make our chocolates special, we incorporate our potato chips and taro chips right into the chocolate. You get a unique mixture of melt in your mouth creaminess mixed with a tasty crunch. A taste that you can only get from Hawaiian Island Gourmet Products.
