Purple Sweet Potatoes are high in fiber, potassium, and vitamin A, B-6 and C to name a few. Sweet potatoes also rate lower on the glycemic index meaning your have less of a spike in your blood sugar which is better for your pancreas. 

In addition to the above health benefits, purple sweet potatoes contain high levels of antioxidants which may help prevent cancer. These antioxidants come from anthocyanins, which occur naturally in purple sweet potatoes and give them their deep purple color.

Our sweet potatoes come from local farmers here on the Big Island. The farmers deliver the sweet potatoes right to our factory, where they are turned into delicious chips. Short delivery times means that we use the freshest sweet potatoes possible.

We use only three ingredients to make our sweet potato chips (sweet potatoes, oil, and salt). We don’t use any additional preservatives or additives, but instead rely on the quality of our ingredients and our time proven cooking methods. The resulting sweet potato chips are some of the best made today.

Hawaii Island Gourmet and Atebara Chips has been making chips locally here in Hawaii since 1936. We are Hawaii’s first chip company and are also responsible for producing the first Taro Chip (a smart business decision by the the company founder, Mr. Atebara, when all of the potatoes disappeared due to WWII). We began making sweet potato chips soon after.

Over the years we have always focused on being local and sustainable. Our methods in dealing local  help support our community and farmers, and are also responsible for the freshness and delicious quality of our chips. Today, I would like to explain this process by introducing you to one of our sweet potato farmers, Tom.

Big Island Sweet Potato Farmer Tom

Tom (in the picture above with Hawaii Island Gourmet Manager, Avis) and his family have been farming here on the Big Island for over 6 years. His company, Big Island Ag Products LLC primarily grows sweet potatoes and ginger. When I ask him what he likes about farming he states, “Our family loves farming. The thought of growing something that people like is just fantastic.”

Tom’s love of farming produces great sweet potatoes. The first important step in delicious sweet potato chips.

The second step is to make sure that the sweet potatoes are as fresh as possible. We work with Tom on a weekly basis so that his delicious sweet potatoes are brought to our shop as soon as they are pulled from the ground.

Picking the best sweet potatoes

Once they are pulled, they also have a very short trip. Tom’s farm is located just 20 minutes from our factory.

Our sweet potato “cookings” are scheduled with Tom’s deliveries to create the freshest sweet potato chips. We begin turning sweet potatoes into sweet potato chips when the sweet potatoes are the freshest. The final step.
